Spelt Flour
Range
Spelt flour can
be traced back to ancient civilizations in
Europe and Asia. It was a major cereal crop for
the Romans. It is thought that spelt was
one of the earliest cultivated crops
involving cross pollination between goat
grass and emmer wheat. Spelt comes from the
same family as common wheat although its
makeup is very different and can be
tolerated by some people with a wheat
intolerance. The demise of spelt occurred
during the Industrial Revolution.
Developing agricultural methods led to the
preference for common wheat which was easy
to thrash and cheaper to process. People are now
enjoying the wonderful nutty flavour of
spelt flour in breads and other products and
are reaping the benefits of this wonderful
flour.
